So the cat is out of the bag, it’s officially Autumn! the weather has finally started to cool down (I say start to cool down I think it is about two and a half degrees warmer in London than the north of england) and it’s getting to the end of the month. So, it’s looking more and more like the summer holidays are over.
I’ve already done some gardening, a long overdue haircut and finally finished up a book that had been sitting untouched for 3 months. The weather is perfect, the skies over London are a pretty grey and dark blue and there is a strong chance we will beat this year’s record for the highest temperature in the UK ,
This record is definitely on the long side though – The Met Office in the UK has had records for 29 days, but even if we get there this year they may not be able to prove it in 3 months when the weather in London starts to dip again.
So I have decided to make some lemon muffins and today I am going to share my recipe with you! I have been making these muffins for years and I find them wonderful, delicious and moist. I make them for friends and family and I know you will love them just as much as I do.
Here is the recipe for the best lemon muffins you will ever have.
2 large eggs
1 cup of sugar
¼ cup of lemon juice
2 cups of flour
1 teaspoon of baking powder
½ teaspoon of baking soda
¼ cup of milk
Preheat the oven to 375 degrees F, and grease a muffin pan
Whisk the eggs with the sugar, and lemon juice in a mixing bowl
Sift together the flour, baking powder, and baking soda
In a separate bowl mix together the milk and the eggs
Add the milk mixture to the flour mixture, and mix it together
Stir in the melted butter and mix it in
Melt the butter and stir it in
Drop the batter into the muffin pan, fill with water
Bake for 17 minutes
They are so delicious and the kids just love them. I make them every once in a while when they are in desperate need of a pick me up.
